Veggie Spread

 freeze dried peppersOne of your resolutions may be getting more vegetables into your family’s diet. That can be tricky if you’re one of the many people who don’t love vegetables, or if you have picky eaters in the house. Sneaking vegetables into your favorite foods is an excellent way to boost your veggie intake without reprogramming your taste buds. If you have a home freeze dryer, it’s even easier. For example, sweet peppers can easily be hidden in so many foods – including pizza and pasta sauce or your favorite chili. Just dice up a variety of green, red, yellow and orange peppers,  freeze dry, and then turn them into a powder in your blender or food processor. Peppers are also delicious added to scrambled eggs, omelets, quiches.  (To re-hydrate, spritz with water until the peppers return to their original consistency or just add them right to your egg mixture and they’ll rehydrate as well.)

Sweet Pepper Melange Topping
4 cups diced red, green, yellow and orange peppers (in any combination)
1 medium diced yellow onion
1 teaspoon fresh* oregano
1 teaspoon fresh* thyme
1/2 teaspoon dried red pepper flakes

Combine all ingredients in a large bowl and mix until evenly distributed. Freeze dry and pack in airtight containers. Powder the mixture in a blender or food processor and add the powder to softened butter. This will make the perfect spreadable topping for garlic bread and your family won’t realize you’ve added so many veggies and herbs to their diet.

Try slicing zucchini very thin lengthwise (a mandolin or deli slicer would help) and substitute them for noodles the next time you make lasagna. My fiancé tried it once and he swore off ever making lasagna with noodles ever again ha ha!
