Zucchini All Year Long

I have always had mounds and mounds and mounds of zucchini during harvest season. I make stir fry, soups, zucchini bread and even add it to brownies, but I can never use enough during the summer season. But, the best part about having a home freeze dryer is that now I freeze dry my zucchini to use during the winter or to add to my long-term food storage. I chop it up for soups and stews, slice it for stir fry, make zoodles to replace pasta, turn it into a powder to sneak into spaghetti sauce or make all natural baby food. Tray dimensions are 7.5″x18″. Plan on 7-10 pounds of food per batch. Many customers preserve 1,500+ lbs. of food per year.

My own experience with zukes is as follows. Not blanched, I shred it or slice it. I shred two cups, and FD that portion for future zucchini bread. Sliced and then I just put into a pan with a bit of water, heat and add seasonings and eat.
