If the pressures are in the 100s and the trays are hot, the batch should be finishing. The issue you're experiencing where the batch isn't ending and the food is staying too hot for too long could indeed be due to a known issue with the dry sensing in some prior versions of software.
The solution to this issue is to update your freeze dryer's software to the latest version. This should resolve the dry sensing bug and allow your batches to finish properly. Here is a video on how to update the software.
