How Long Does Freeze Dried Food Last?

When properly freeze dried and stored in airtight containers with oxygen absorbers, freeze dried food can last for many years. Some foods can remain shelf stable for up to 25 years.

Why Does Freeze Dried Food Last So Long?

Moisture is the primary driver of food spoilage. Freeze drying removes approximately 98–99% of the moisture from food, which dramatically slows the growth of bacteria, mold, and other spoilage organisms. With oxygen absorbers removing the oxygen from sealed containers, food has very little left to cause degradation.

How Should Freeze Dried Food Be Stored?

Proper storage is essential for maximizing shelf life. Freeze dried food should be:

- Sealed in airtight packaging immediately after coming out of the freeze dryer (freeze dried food absorbs moisture from the air very quickly when left exposed)

- Stored in Mylar bags, glass jars, or vacuum-sealed containers with oxygen absorbers

- Kept away from moisture, heat, and direct light

- Organized in plastic totes or storage bins to protect against rodents, punctures, and environmental damage

What Are Oxygen Absorbers and Why Are They Important?

Oxygen absorbers are small packets placed inside sealed storage containers to remove residual oxygen from the surrounding air. Even inside a sealed container, oxygen can slowly degrade food quality over time — affecting flavor, color, and texture. Oxygen absorbers help extend shelf life significantly and are especially important for long-term storage.

Once a container is opened, the oxygen absorber should be replaced before resealing for continued long-term storage.

Can Freeze Dried Food Go Bad?

Yes. Exposure to air or moisture can shorten shelf life and cause quality loss. The most important factors are making sure the food is completely dry before packaging, sealing quickly after the cycle ends, using the right size oxygen absorber, and storing containers in appropriate conditions.
