I have always had mounds and mounds and mounds of zucchini during harvest season. I make stir fry, soups, zucchini bread and even add it to brownies, but I can never use enough during the summer season. But, the best part about having a home freeze dryer is that now I freeze dry my zucchini to use during the winter or to add to my long-term food storage. I chop it up for soups and stews, slice it for stir fry, make zoodles to replace pasta, turn it into a powder to sneak into spaghetti sauce or make all natural baby food. I love how easy it is to grab freeze dried zucchini from my pantry or food storage and insure my family is getting nutrient rich foods all year long.
